Try this light rye sourdough
First: the Sourdough Starter

1/3 cup plain flour
1/3 cup rye flour
2/3 cup water

Mix it all together and leave it on the kitchen bench for a minimum of 24 hours. It is ready when it smells sour.
Feed it and put it in the fridge.
You “feed” it with following:
1/3 cup plain flour
1/3 cup rye flour
2/3 cup water

It will be ready to use after 48 hours.
Store it in the fridge in a container with a lid.
“Feed” it every time you use some or minimum once a week.

Then the bread:
Sourdough rye bread with grains (Makes 2 loaves)

325 gram sourdough starter
4 cups water
1 tbsp Parisienne browning essence
5 gram salt

Mix above together.

400 – 450 gram plain flour
400 – 450 gram rye flour
1 cup soaked wheat grains

Mix gently grains and flour in and scoop the batter into 2 loaves pans and let it rise on the kitchen bench for 3 to 4 hours. Dust with seeds (optional) and bake in a pre-heated 200°C oven for 1 hour and 15 minutes or until the crust is tough.
