Baking tips for cake bakers.

Thanks to all the expert bakers who have contributed their knowledge and experience to help us bake perfect cakes, including Gillian Bell, Pernille Berg Larsen and Tania Cusack.

Baking tip: don't melt the butter
Baking tip: use a wooden spoon and a wide bowl
Baking tip: lemon zest adds zing to fruitcakes
Baking tip: paint the top of your freshly cooked cake with the leftover juice from soaking the fruit
Baking tip: eggs should be room temperature when adding to the cake
Ovens have their own temperaments - use a temperature gauge to double check heat
Baking tip: cut your hard butter first
Baking tip: try prunes in your dried fruit mix
Baking tip: use fruit juice instead of alcohol to soak dried fruit
Baking with local farmers eggs: weigh them don't count them
Stop the creamed mixture curdling when adding eggs by using some flour
Got a fan forced oven? Turn off the fan to stop your cake drying out.
All baking measures are not the same worldwide.
Baking tip: using treacle or honey? Oil the spoon so it slips off easily
Add your own flavours to a fruit cake by following the batter rule.
Don't beat your eggs too much - it will result in a drier cake
Want to make a more chocolate-y cake? Swap out some flour for cocoa
Baking tip: if you can't turn off the fan in your oven, bake at a lower temperature
