I asked our baking experts and got this reply:
There are a lot of variants – dependant on what style of loaf, climate, texture, how much sourdough added
(or polish starter) and crumb expectation.
Typically a straight 100% Stoneground Meal will give you a dense loaf.
Would suggest 90/10 ( 10% White Flour ) to make up 100%
Would fold at least twice – three times ideal.
