Hummus is usually made with garbanzo-style chickpeas (also known as White Chickpeas), usually, the whole bean cooked and pureed, but occasionally garbanzo bean flour is used. Besan flour, made from Desi Chickpeas (Brown Chickpeas), which are more mild-tasting than the garbanzo chickpea. However, we tested besan for hummus and can confirm that it does make an authentic-tasting version of this popular Middle eastern Dish.
100g of Kialla Pure Foods Organic Besan Flour
300ml water
30ml Organic Extra Virgin Olive Oil
1 clove of garlic
★30ml fresh lemon Juice: 30ml
★15ml Tahini Paste
★2 teaspn ground cumin seeds
★2 teaspn ground coriander seeds
★4 pinches of salt
★Pepper to taste
Parsley for decoration
Paprika for decoration
Olive oil for decoration
Fry garlic in olive oil in a small pot over low heat until brown
Place the besan flour in a bowl, and mix with water little by little, using a whisk.
When the garlic has started to brown, pour besan and water mix into the pot. Cook with medium heat, and mix well while cooking.
When it starts to become pasty, remove from the heat immediately (If you leave it to cook for too long it will become stiff).
Mix all ingredients marked with a ★ and pour into the warm flour paste mix.
Put the hummus paste on a plate, and shape.
Decorate with a swirl of olive oil, and sprinkles of paprika and parsley.
