Kialla’s Heritage Flour range brings a rare Australian wheat variety back into the hands of artisan bakers.
Grown by Paul and Cherry Murphy and their family near Emerald in Central Queensland, Foster wheat carries a story that reaches back to George Foster and his son Gordon, early pioneers of wheat growing and organic farming in the region.
For the Murphy family, preserving Foster wheat has been a quiet labour of love. What began with a small number of surviving seed sacks has been carefully rebuilt into a commercial organic supply through years of dedication and practical care.
Foster wheat behaves differently from modern wheat, rewarding careful hydration, long fermentation and skilled handling with rich flavour, strong crust colour and distinctive texture.
Available as Heritage Artisan White Flour and Heritage Stoneground Wholegrain Flour, the range offers two expressions of the same grain: one refined and open, the other wholegrain, rustic and full of depth.
