This variation on Arzu’s popular vegan banana bread adds blueberries and oats.

Ingredients

2 cups Kialla Pure Organics Stoneground Wholegrain Self-Raising Flour

3 large mashed bananas

1 tsp ground cinnamon

1 tbsp vanilla

1/3 cup coconut sugar or raw organic sugar (powdered down to remove lumps)

1/2 cup grape seed oil or light olive oil

1/2 cup almond milk or soy milk

1 cup frozen blueberries

1 tbsp oats to sprinkle on top before baking

Method

Mix all the wet ingredients except blueberries in one bowl
Mix dry ingredients in a separate bowl then fold through both lots of ingredients together.
Add blueberries last and fold in using a plastic spatula.
Pour the cake mixture into a lined baking tin and sprinkle oats on top.
Bake for 50-55 min in preheated oven at 180º, test with a toothpick to ensure the cake is cooked before removing.
