Oat bars with cinnamon & chai spice

These delicious muesli bars make a healthy breakfast or snack. If you can’t find a powdered chai spice mix it’s easy to make your own.

Ingredients

 3 cup Kialla Pure Organic Rolled Oats

 1/3 cup Kialla Pure Organic Sunflower Kernels

 1/2 cup raw hazelnuts

 1/2 cup raw cashews

 1/2 cup raw almonds

 1/3 cup raw pumpkin seeds

 1/3 cup chia seeds

 1 tsp ground cinnamon

 1 tsp powdered chai spice (if you can’t find, mix ¼ tsp ground cloves, ½ tsp ground cardamom, ½ tsp ground ginger)

 1/2 tsp flaky salt

 1 tsp vanilla bean paste

 1/3 cup light olive oil

 1/3 cup raw honey or maple syrup

Method

  1. Blitz 1½ cups of oats in the food processor and add to a bowl with the remaining 1½ cups, then add all the nuts (roughly chopped or left whole) seeds, chia, cinnamon, chai spice, salt, (all dry ingredients).
  2. Mix wet ingredients (oil, sweetener, & vanilla bean paste).
  3. Add wet ingredients to dry and mix to ensure it all is coated evenly and feels like a dough texture.
  4. Line square or rectangle (small) baking tray with greaseproof paper and press mixture in, ensuring it’s pressed down firmly to get an even spread. Tip: use another baking dish and baking paper to press down on the mixture so you get a nice even flat top before baking.
  5. Bake in preheated oven for 30 minutes at 180º and then remove. Allow it to cool in the tray, don’t remove it until fully cooled.
  6. Remove & place onto a chopping board and cut into desired squares or rectangle pieces.
  7. Keep in airtight container and enjoy this delicious, nutrient-dense snack for morning or afternoon tea.
