Dutch-Style apple pancakes

These Dutch-style baked pancakes are easy when you use our Organic Pancake Mix. Try it with our Vegan mix, maple syrup, and coconut yoghurt for a vegan version.

Ingredients

 1 Bottle of Kialla’s Original Pancake Mix, or Vegan Pancake Mix

 2 cooking apples, skinned, cored and chopped

 1 tablespoon of mild olive, coconut or macadamia oil

 2 tablespoons of honey, or 1 tablespoon sugar + maple syrup to serve (for a vegan option)

 Handful of toasted cashews

 400ml of your favourite milk

 Mascarpone (or coconut yoghurt for a vegan option)

Method

  1. Pre-heat the oven to moderate (170 degrees). Choose a pan that can be used on both stove top and oven. If you don’t have one you will need a frying pan and a shallow oven-proof dish.
  2. Add oil to pan on stove top and heat gently before adding apple pieces and honey, or sugar (if using sugar add a tablespoon of water or more to ensure the apple mixture is moist but not wet).
  3. Allow to caramelise on low heat until apple is softened and well coated with honey or sugar and is just starting to brown but not dry out (add more honey or water if necessary). Set aside some apple to decorate the pancake once cooked.
  4. Make the pancake mix with the milk, following the directions on the packet.
  5. Pour pancake mix into pan with caramelised apple, stir gently to mix. Allow to partially cook (until bubbles appear in the mix and mix starts to solidify).
  6. Pop into an overproof dish and then into the oven to brown the top and finish the pancake (about 10 minutes).
  7. Serve warm topped with reserved apple, toasted cashews, and mascarpone or coconut yoghurt. Add a drizzle of extra honey or syrup too.
