Homemade ‘Custard Creams’ are best! These ones have a crisp shortbread biscuit with creamy custard flavoured icing filling.
125g butter
1 heaped tablespoon custard powder
2 heaped tablespoons icing sugar
1 & 1/4 cups Kialla’s Organic Unbleached Self-Raising Flour
2 dessert spoons butter (icing)
3 tablespoons icing sugar (icing)
2 dessertspoons condensed milk
vanilla extract
Cream the butter & icing sugar until pale
Fold in the custard powder & flour
Roll into balls, place on a lined biscuit tray & press with a fork
Bake in a slow (160ºC) oven for approximately 12-15 mins
Allow to cool on a cake rack and once cool join together with icing.
To make the icing simply combine all ingredients and mix until creamy.
Add passionfruit to the icing for a fresh flavour.
